I made some right scrumptious pizzas last night which were still in line with my Weight Watchers diet I am doing just now. I made two low fat/low point filo pastry based pizzas for myself and my mum. I also made 4 pizzas on an actual already pre made pizza base for my sister! I cooked all of the pizzas for 7 minutes at 180 degrees Celsius.
This is my goats cheese, caramelised onion and mushroom filo pastry pizza:
You will find the filo pastry within the chilled sections of Asda or Tesco. I folded one sheet over to make it a thicker base and it worked pretty good!
To caramelise the onions:
I thinly sliced 1 red and 1 white onion, fried them for 10 minutes and then sautéed them with 2 teaspoons of light muscovado sugar and 2 tablespoons of Balsamic Vinegar. Fry for 5 further minutes and add a dash of water to keep the onions glossy.
To construct the pizza:
I just used a jar of pizza base sauce (or alternatively you can use Tomato Purée) and spread it all over the pastry. I then placed my onions and about 50g of goats cheese with a sprinkle of mature low fat cheddar cheese on top. Super yummy! 😍

This pizza is for any of you veggie lovers out there who love a bit of crunch to your pizza!
Same as Pizza above but replaced with 2 red peppers, 1 green pepper, 1 yellow pepper and 3 button mushrooms. I used Weight Watchers low fat cheddar cheese for this but you can use any grated cheese you wish! Also I had some leftover Goats cheese so I added that in too. It was very flavoursome!
Lastly but certainly not least are my four mini pizzas! These were just so simple and delicious! 😍 The bases for these can be found in any local super market and were the Napolina Authentic Italian Mini Pizza Bases (4x75g).
Top left is a pepperoni mini pizza 🍕
Spread some yummy tomato pizza sauce with 5 slices of pepperoni and 3 big slices of mozzarella cheese.
Top Right is a Margarita mini pizza! 🧀
Same situation as the pepperoni but change it up with just a blend of grated cheeses! Parmesan and cheddar is a lovely mix so could give that a go ❤️
Bottom Left is a Veggie mini pizza 🥗
Change the ingredients so it's just a whole load of veggies, any types work depending on your taste! I put some grated mozzarella cheese on this and it was divine 😋
Bottom Right is a Brie and Caramelised Onion mini pizza!
Same sitch but different ingredients I used the leftover onion mixture from my pizza to make this but changed the cheese to Brie! If you don't like goats cheese, Brie or Parmesan are always good substitutes.
