Winner winner, such a lovely dinner!

Last night I cooked the boyfriend and I the most AMAZING dinner - jambalaya! It's one of my favourite dishes of all time. It is full of flavour mostly because you cook the rice in the tomatoes and stock. It's actually a very simple one-pot dish, but it does take a while to cook.

Jambalaya is a Louisiana origin dish of Spanish and French (especially Provençal cuisine) influence, consisting mainly of meat and vegetables mixed with rice. Traditionally, the meat always includes sausage of some sort, often a smoked sausage such as andouille, along with some other meat or seafood, frequently pork, chicken, crawfish, or shrimp. The vegetables are usually a soffritto-like mixture known as the "holy trinity" in Creole and Cajun cooking, consisting of onion, celery, and green bell pepper, though other vegetables such as carrots, tomatoes, chilis, and garlic are also used. After browning and sauteeing the meat and vegetables, rice, seasonings, and broth are added and the entire dish is cooked together until the rice is done.

I've adapted my recipe over the years. I've tried to make it healthier and use less oil while cooking. I used to make it with chorizo sausage as it gives it a lovely smokey flavour, but i cut that out because chorizo is very fatty and high in those naughty calories; instead I sprinkle in a healthy helping of smoked paprika and job done - tastes perfect! I would usually make it with chicken, but can easily use vegetable stock and add in chickpeas instead of chicken. This version actually has chicken in it πŸ™ˆ Remember how I said I got extremely ill while trying to be vegan? Well the doc says that I need to consume some meat every so often. I rarely do it anymore because I see myself as vegetarian, but I do dabble in chicken every once in a while and tbh I do feel a lot better for it... as annoying as that is.

Anyhow... dinner was super tasty and Kevin LOVED it so I'm a very happy girl 😁 I'm even happier because I managed to take a video of me cooking and turn it into a gif so I could upload it on CS hahaha

Here is my cookbook recipe. Please excuse the bad writing... This is for 2 people but tbh would probably do around 3 - but i save some for dinner the next day.

For a more veggie friendly dish remove chorizo. Change chicken stock to veggie stock and obv remove the chicken and replace with chickpeas. For the one I cooked last night I didn't use chorizo - just some olive oil to brown the chicken.

Also! At the stage where you put all the ingredients in add in some salt, pepper, basil, oregano, smoked paprika and some chilli flakes and give a good stir then let it cook. BUT this is a dish you can't leave so unfortunately you'll have to stay with it and keep stirring otherwise near the end it will stick to the pot.
