Feasting Frugally: Creamy chicken and mushroom pasta
Super-rich, filling and flavourful, this dish is a total winner! Good for fuelling up after a hard day at Uni, but equally delicate and rich enough to treat that special someone with. This recipe will serve three people generously, but, as always, you can easily scale it up or down to suit however many you have.
You will need:
• 100g per person of chicken breast fillet.
• 100g per person of pasta - something like penne or conchiglie that catches a lot of sauce!
• 3 medium onions.
• 3 cloves of garlic.
• 8 - 10 mushrooms.
• About 200ml of double cream.
• Fresh basil.
• Salt and pepper.
Prep all your ingredients. Finely chop the onions and the garlic, as well a handful of basil leaves. Cut the mushrooms into thick-ish slices. Cube the chicken into roughly 2cm pieces.
Bring a saucepan of salted water to a rolling boil and throw in your pasta. At the same time, put a large pan on a high heat with some olive oil in. As soon as the oil stops bubbling, throw in your onions, garlic and basil.
Allow all the ingredients in the pan to soften, even slightly to caramelise if you like that little bit of extra flavour. Once the onions are soft, add in the chicken, along with a healthy pinch of salt and pepper.
Once the chicken has browned slightly and is almost, if not completely, cooked through, add the mushrooms; these will give off some liquid, stopping the browning process on the chicken and cooking it through. Straight after the mushrooms, pour in the cream.
As your pasta finishes cooking, everything else should be ready as well. Your creamy sauce should have been simmering and will have thickened to a sort-of broth. Take it all off the heat, drain the pasta and plate up generous portions with a bit of torn basil on top.
